
Lemon Curd (Edit)
Yield
~2 cups
Ingredients
3 large eggs
¾ cup sugar
pinch of salt
½ cup lemon juice
zest of 1 lg or 2 small lemons
4 Tbsp unsalted butter, diced
Directions
Place eggs, sugar, salt, lemon juice, and zest in medium saucepan NOT on heat yet.
Whisk ingredients together until smooth.
Now place on low heat, stirring constantly until thickened (4-5 minutes).
If the burner isn’t on its lowest setting, change it now to the lowest setting and add the butter.
Stir until smooth then remove from heat.
