Lemon Curd (Edit)

Yield

~2 cups

Ingredients

  • 3 large eggs

  • ¾ cup sugar

  • pinch of salt

  • ½ cup lemon juice

  • zest of 1 lg or 2 small lemons

  • 4 Tbsp unsalted butter, diced

Directions

  • Place eggs, sugar, salt, lemon juice, and zest in medium saucepan NOT on heat yet.

  • Whisk ingredients together until smooth.

  • Now place on low heat, stirring constantly until thickened (4-5 minutes).

  • If the burner isn’t on its lowest setting, change it now to the lowest setting and add the butter.

  • Stir until smooth then remove from heat.
