
Orange Vinaigrette (Edit)
- This sauce can be used as a salad dressing (just add more oil), though I was introduced to it through Granite Ranch (the private vacation ranch in Jackson Hole, WY of the Rockefeller family), where they served it with King Salmon. I love to have a little orange segment and sauce with each bite of salmon which is why I listed 5 oranges as a possibility.
- Sides that go well with this dish are wild rice and broccoli or broccolini.

Ingredients
2 cup of orange juice
⅓ cup white wine vinegar
¼ cup extra virgin olive oil
salt and pepper to taste
3-5 oranges, supremed
Directions
Place juice over medium heat and bring to a simmer. Cook for about 30 minutes or until reduced to about ¾ cup.
Combine vinegar with reduction.
Whisk in the oil. Feel free to add more if you desire a more mild flavor.
Salt and pepper to taste.
Serve sauce with orange segments over fish or scallops.
