Spinach Sausage Potato Soup (Edit)

Ingredients

  • 1 Tbsp olive oil

  • 1 lb. spicy Italian sausage

  • 3 cloves garlic, minced

  • 1 onion, diced

  • ½ tsp oregano

  • ½ tsp basil

  • ½ tsp crushed red pepper flakes

  • salt and pepper to taste

  • 5 cups chicken broth

  • 1 bay leaf

  • 1 lb. red potatoes, diced

  • 2-3 cup fresh spinach

  • ¼ cup whipping cream

Directions

  • Drizzle oil into saucepan and add sausage, garlic, and onion.

  • Brown ingredients over medium heat.

  • Add oregano, basil, red pepper, salt, and pepper (this can still be done while the meat is browning).

  • Add chicken broth and red potatoes. Bring to boil and simmer until potatoes are softened.

  • Add spinach and stir until spinach is tender and cooked.

  • To finish, add whipping cream.

  • Serve and enjoy!
