
Spinach Sausage Potato Soup (Edit)
Ingredients
1 Tbsp olive oil
1 lb. spicy Italian sausage
3 cloves garlic, minced
1 onion, diced
½ tsp oregano
½ tsp basil
½ tsp crushed red pepper flakes
salt and pepper to taste
5 cups chicken broth
1 bay leaf
1 lb. red potatoes, diced
2-3 cup fresh spinach
¼ cup whipping cream
Directions
Drizzle oil into saucepan and add sausage, garlic, and onion.
Brown ingredients over medium heat.
Add oregano, basil, red pepper, salt, and pepper (this can still be done while the meat is browning).
Add chicken broth and red potatoes. Bring to boil and simmer until potatoes are softened.
Add spinach and stir until spinach is tender and cooked.
To finish, add whipping cream.
Serve and enjoy!
